Samosa Dough

Things you need
4 cups un bleached all purpose flour

1/2 cup canola oil
1 tsp salt
1 tsp cumin or Ajwain optional
1 1/2 cup cold water
Plastic wrap to cover

How to make a dough
In an open shallow mixing bowl add flour and salt.
2. Mix using egg beater
3. Add oil and keep mixing until flour changed into coarse meal.
4, Slowly add one cup water mix well then use the remaining water slowly if needed.
5. Knead until a firm dough is formed. Cover dough with plastic wrap for 15 minutes . Now your dough is ready to make 40 samosas. Yes 40!
Filling
5 pound red potatoes.
1/2 cup chopped cilantro
1/4 cup diced jalepeno peppers
Seasonings
Salt
Red pepper flakes
Toasted dry cumin and coriander coarsely grind.
Pinch of turmeric
How much of each. ?This part proves me to be typical Pakistani cook because we don’t measure seasonings 😇so add as much you wish.
How to make: Boil potatoes. Peal them immediately. Mashed with fork or if you have potatoe masher.. Add cilantro and peppers. Mix well and then add dry seasonings. Mix it well and keep on side.

How to assemble

Things you need
Samosa dough
Potatoe filling
rolling board
rolling pin
water in a bowl and knife
How to

Divide dough into 24 equal parts. Roll each part in a shape of a ping pong ball. Press a dough ball with your hands and dust with flour. Rolling becomes little easier if you press it with a tortilla maker otherwise do with hands. Place dough ball on a flat surface and roll he ball until it rolled into 6 inch round. Cut the round in half. Join two straight end and make a funnel shape. Place the funnel between your fingers and palm. Fill the funnel with potatoe filling. Close the ends by wetting with water and pressing gently. Place ready samosas on a parchment paper on a flat tray and put them in the freezer until they become hard. Now transfer them in freezer bag. Thaw and fry when you are ready to eat.
