Breakfast Burrito

​Snack recipe: Breakfast Burrito

Things you need
  • 2 (10 inch) white or wheat tortillas
  •  3-4 tater tots each burrito
  • 1 egg scrambled
  •  1 teaspoon milk
  •  1/4 teaspoon butter
  •  1 spring onion diced
  • 1-2 slices of jalapeno or green pepper diced (optional)
  •  1/4th Roma tomato seeded and diced
  • à2 tablespoon shredded cheddar cheese
  •  2 tablespoon shredded pepper jack cheese
  •  2-3 strands of chopped cilantro
  •  Shakes of Salt and pepper
  •  Butter Pan spray
  • Salsa

​Here’s How
1. Prepare frozen tater tots according to the package
2. Heat a skillet on medium cook. Pan spray butter. Add peppers and onions. stir about 1 minutes remove from pan and set aside.
3. In a medium bowl whisk egg and milk, season with salt and pepper. In a non stick skillet heat the butter up then add the egg mixture cook on medium low just until cooked, remove from heat. Do not over cooked eggs. Set aside.

. In the middle of a flour tortilla add some cheese, then a couple tablespoons of the scrambled eggs. Followed by peppers and onions.. Add  tater tots and some fresh tomatoes, cilantro and a pinch of salt and pepper then tuck the sides in and roll up the tortilla. Place on microwave safe plate and cover with a damp paper towel.
5. Microwave for just  few seconds to melt the cheese.
6. May want to serve with Salsa:)

​Things you need
  • 1  24’’French Bread
  •  1/2 cup Olive oil
  •  I Table spoon Italian seasoning
  • 1/2 teaspoon of salt and pepper
  • Dash of garlic salt
  •  Block of Mozzarella cheese
  •  4  tomatoes
  • Bunch of fresh basil
 

​Here’s How
1. Slice the bread into small pieces. Need four pieces per serving. Set aside
2. Pour olive oil in a small bowl.
3. Add Italian seasoning.
4. Add salt, garlic salt and black pepper.
5. Brush the mix ingredients on one side of the bread.
6. Place pieces on a greased baking sheet. Place bread on the sheet with seasoned side up. Set aside
7. Turn toaster oven on at 350F
8. Chop Tomatoes and basil leaves.
9. Sliced and place cheese on the top of the bread.
10. Place tomatoes and basil on the top.
11. Cover the top with more cheese. optional
12. Sprinkle more salt and pepper if desired
13. Place them in oven for 5-7 minutes or until you see cheese has started to melt
