Chicken Broast

Chicken Broast

Ingredients
1 whole chicken cut into eight pieces without skin
1/4 cup Lemon Juice
1/4 cup White Vinegar
1 TBS salt
​I pack of National Broast Mix
2 Eggs
Canola oil spray
How to make it
1.Wash and take all the impurities out of skinless chicken. Place the chicken in the strainer to take the moisture out
2. Add salt vinegar and lemon juice. Rub everything on the chicken pieces. 
3.Refrigerate for 2-3 hours
4.Beat two eggs. roll chicken pieces first in egg wash and then into the batter mix. One piece at a time.
5. If you have streamer steam the pieces in a way that they are flat in the streamer but if you dont have a steamer. ues a shallow pan fill with water and place a pot size strainer on the pot and a tight lid to use.
6. Steam chicken for 30 minutes. You can check by inserting fork if the pieces are done cooking. some of the cooking will also be done in the air fryer. 
7. Now preheat AIR Fryer and place pieces in the air fryer at 400 for 25 minutes. Spray generous amount of canola oil to make pieces little crunchier..
Serve with hom,e de fries and steamed brocolli

Punjabi Beef Steaks

Pakistani Punjabi Beef Steaks

  Ingredients
  •   4 Pound beef cut in thin slices
  •   1 1/2 cup greek yogurt
  •   1 Lemon(Juice)
  •   !/2 cup Vinegar
  •   2 TBS Ginger Garlic Paste
  •   2 TBS Papaya paste
  •   Salt
  •   Red chilli pepper
  •   6 whole dried red pepper
  •   1tsp Corriander powder
  •   1 tsp Cumin Powder
  •   1 Tsp Katchari Powder or a meat tenderizer
  •   1 TBS National Bihari Kabab Masala(Optional)
  •   1/2 Cup Water to tenderize meat in pressure cooker
  •   1/4th cup Canola Oil 1/4
How to Make it:
  1. 1. Mix All the ingredients except the steaks in a shallow pan.
  2. 2. Add Beef steaks and marinate for 12 to 24 hours
 Three ways to make it

Pressure Cooker
  1. a. Transfer all the ingredients to a pressure cooker . Add 1/2 cup of water and pressure cook for 7 minutes. After opening the pressure cooker check the meat if its tender by pulling it apart with a fork. Does not need it to be very soft because it will break. Cook little more until all the water is evaporated. Now add canola oil. until all is mixed well.
  2. Garnish with cilantro and Serve with Mint Chutney and Tandoori Naan.
 Instant Pot
  1. Transfer everything to a Instant pot and follow directions for the beef slices.  When meat is tender and water evaporated add oil and cook for one minute until all the oil is mixed well
  2. Garnish with cilantro and Serve with Mint Chutney and Tandoori Naan.
Bake
  1. Preheat oven at 375
  2. Lay all the meat on a greased baking sheet and bake for 30-40 minutes depending on the thickness of the beef slices. Once beef is tender. Check by pulling apart with
  3. Garnish with cilantro and Serve with Mint Chutney and Tandoori Naan.

Chicken Hot and Sour Soup

Ingredients

  1. ​Chicken Broth 4 Cups
  2. Boiled Shredded Chicken 1cup : 1leg, 1 thigh, 2 oz of boneless breast
  3. Garlic/ginger paste 1 tsp
  4. Salt 1TBS
  5. White or black pepper 1TBS
  6. Sesame oil 2 TBS
  7. Vinegar 1TBS more for garnish
  8. Soya sauce 1TBS more for garnish
  9. Corn starch ITBS
  10. Egg 1
  11. Celery stalk: 2 finely diced
  12. Carrots 2 long carrots finely sliced
  13. Spring onions 4 finely
            Garnish
  • ​Chopped Cilantro
  • Serve with:
  • Crackers, hot sauce, Vinegar and soya sauce

How to:

  • Sauté in ITBS of oil two pieces of chicken with bone and 2 pieces of boneless with ginger garlic paste until chicken change its color but dont let it get brown.
  • Add salt, pepper, vinegar and Soya sauce
  • Add six cups of water. Boil until four cups remain . Check with fork if all pieces are cooked from inside and  no traces of blood remain.
  • Take chicken out and pull apart the bones and shred all pieces. Set aside
  • In another pan saute all the vegetables in another TBS of oil except the spring opinions and cilantro
  • Now add shredded chicken and mix well.
  • Pour chicken broth and let it boil.
  • When boiling add the beaten egg white slowly and keep stirring.
  • At last mix cornstarch in equal amount of l water to make a paste.  Slowly add the paste to the soup  and keep stirring.
  • Let the soup boil until it reached the desired thickness.
  • Add spring  onions almost to the end.
  • ​Garnish with cilantro. Serve hot with crackers,  hot sauce ,soya sauce and vinegar.

Ghee with Punjabi Saag and Makai kee Roti

Clarified Butter/Ghee

​Ingredients

  1. Unsalted Butter 4 sticks

How to make it?

  1. Melt butter in a shallow pan on medium heat
  2. Let it cook until white foam forms on the top
  3. Discard white foam with a spoon or spatula
  4. Let it cool little bit but not completely
  5.  Pour the warm  liquid into a air tight glass jar. If you still see some traces of white form, pass through strainer
  6. Keep it in the refrigerator or at room temperature as long you want
* Liquid will change into light yellow solid form
​*Air tight jar must have no traces of water

PunJabi Saag
Creamy Greens

Punjabi Saag/Creamy Spinach Dish

Ingredient
4 cups of chopped spinach
2 cups of chopped mustard
2 cups of chopped brocolli
2 Jelepeno peppers 1 1/2 for step1 and 1/2 for step 3
1/2 red Onion
4 cloves of garlic
Salt and crushed red pepper
1 cup of whole milk for step 1 and 1/4 for step3
1 cup of water
1 Butter Stick

How to make it
Step 1
1. Mix all the ingredients in a  stove pan and cook on medium high until all the water and milk dries up but not to the extend that it starts to stick to the pan.
Let it cool.
Step 2
Transfer everything to the blender jar. Add 1/4 cup of milk to make the paste creamier.
 Step 3
In the same pan Melt of butter and add chopped jelepeno pepper.s As butter melt add the the blended spinach. Cover immediately and turn the stove off.

Garlic Naan Served with Chappal Kabobs

Ingredients
All purpose unbleached flour 4 cups
Baking Soda 1/2 tsp
Warm Milk 1 cup
Warm water 1/4th cup
Yeast 11/2 Tbs
Greek yogurt 1/2 cup
Honey 2 Tbs
Toppings/garnish
Butter melted 1/4th cup
Fresh minced garlic 4 cloves
Cilantro 5 strands chopped OR
Sesame seeds 2 Tbs mixed with 1/4 cup melted butter
How to 
In a big glass bowl, mix yeast, water and honey together. Let it stand for 10 minutes. Add milk and yogurt. In a separate bowl mix baking soda and flour. Slowly add to the wet ingredients. Gather everything together till all the mixture bind in a form of a big ball. Add some more water slowly if needed. Cover the glass bowl with plastic wrap and put in a warm place  for an hour and a half, so the dough rise double the size.
Trick:  Sometime you cant find a warm place at home. on the top of the plastic wrao cover with a towel and have a space heater in the area where you will keep the bowl but dont let it to be too close to the bowl. Yeast works better when it finds a perfect warm temperature.
Mix toppings in a small bowl and keep it ready to use
Cooking Instructions
Once the dough is ready. Place it on a cutting board surface and cut into 12 equal parts Each in a size of a  tennis ball. Roll on a slightly dusted surface in a shape of an oval. brush both sides with a melted butter. 
Heat a skillet on a medium hot setting. once its hot place an oval dough on the skillet. Brush toppings on the top side. Cover the skillet with a lid and let it cook till you see the bubles are popping up high you can lift the cover and check the bottom iif its is evenly browned but not overly cooked. Turn the naan and cook for aditional two or two minutes with the cover. lift and see if its evenly cooked on the other side.
Enjoy with any kind of kabobs, curries, daals, and or green chutney and if you are like me i would love to have it with my morning tea.

Keto squash scampi 🍤 
Jumbo raw shrimp 20-25
3 TBS butter or ghee
5 cloves of fresh beaten garlic
1/2 tsp salt
1 teaspoon of black crushed pepper
1/2 tea spoon of crushed red pepper optional
1 cup whole milk
1/2 cup heavy cream
1 TBS corn starch or keto starch
2 medium size thinly sliced Yellow or green squash
1/4 cup shredded Parmesan cheese 
Panko crumbs or coarsely grind flax seed
Spring onion cut in rounds for garnish

Keto Cheese Balls

Ingredients
Egg 1
Mozzarella Cheese 1 Cup
Parmesan Cheese 1 Cup
Cream Cheese 2 TBS
Almond Flour 1/4th Cup
Black Pepper 1/2 tsp
Sun Dried Tomatoes( Optional)
How to Make it
Turn oven on at 400. Mix every thing well. You can beat egg before mixing but i was in hurry so I mixed everything well together and form a big ball.  Cut the ball into 8 pieces and gently make balls. Coconut oil greased hands:)will help you do this step easily. Bake for 15-18 minutes. Sorry forgot to take the pic of baked ones because have to rushed ou t of the door but the best part was that i was able to share the wealth of keto with my co workers.

Keto Breakfast Balls

Why Keto all of sudden? Just for fun to see which one is better. Keto or Paleo. they are almost the same but i am leaning more towards Keto because it has all the things i like to eat. To name few BUTTER yes I can eat butter itself if i need to? Well breakfast is always a challenge meal to me. I am not a fan of eggs every day but love nuts. These nutty buttery balls are perfect to overcome crunch cravings....
Ingredients
Flax Seeds: 1 Cup
Almonds:1 Cup
Cashews:1 Cup 
Walnuts: 1 Cup
Unsweetened shredded coconut : 1/2 Cup
Chia seeds: 1/2 Cup
How to do it
Chop all the nuts seprately in a chopper at required size. Some might get more chopped and looks like a powder which is also fine. Mix with your choice of nut butter. Since i am sharing a wealth of nuts with my daughters I asked for their preference. Almond or peanut butter. Taste will be different but the quality will be the same. Enjoy

Buffalo Chicken Dip

Super Bowl is around the corner and all i can think of are spicy appetizer dips. This one is all time favorite and the ingredients are so simple that nothing can  go wrong with it. Just add more of any ingredient you like to eat and the texture and taste you like to achieve. Thats why I am only listing the ingredients not the quantity
             Ingredients
  • Cooked Shredded Chicken Breast meat
  • Cream Cheese
  • Shredded Mozrella Cheese
  • Shredded Cheddar cheese
  • Frank Hot Sauce
  • Ranch Dressing
  • Spring onions
Mixed every thin together i a crock pot and let it cook for 2 hours on low heat settings. Best served warm with any kind of bread or crackers.

Smoked Paprika Chicken Cubes
The most powerful ingredient for this recipe is Smoked Paprika
Add salt and black pepper. You may want to sprinkle some crushed pepper as well.
Cover chicken so it cooked completely in steam. Uncover the chicken add ample amount of smoked paprika. Cook until you think water is evaporated completely. 
Assemble with your favorite ingredients and of course Tazeki dip
Tazeki Sauce
Greek Yogurt plain: 2cup
Extra Virgin Olive oil: 4TBS
Fresh Lemon Juice: 4TBS
Samashed Garlic cloves: 4 
Peeled Crushed Cucumber: 1

Apple Cinnamon Crescent Rolls
Saying good bye will never be an easy task. Today was a last day for a student teacher at our class. It’s amazing to see someone flourish under your umbrella. Anyway to celebrate her success in our classroom we decided to have a farewell quick breakfast. Since it’s still fall Apple cinnamon and brown sugar is all I can think of.





Ingredients
Granny Smith Apple: 8 slices
Brown  sugar: 1/3 cup

Cinnamon 2 teaspoons
unsalted butter 3 Tablespoon
chopped walnuts 1/4 cup
Crescent Rolls: pack of 8 rolls
Directions
Heat oven at 350. Mix allthe dry ingredients together and set aside. Lay crescent roll triangles flat on baking tray. Brush melted butter on triangles. Sprinkle dry mixture on them. Place apple slice on the wide corner and wrap the slices with the rest of the roll. Brush some more butter on the top and sprinkle the remaining dry ingredients on the top. Bake for 10-12 minutes. Let it cool for 5 minutes and then remove to a serving dish. Serve immediately when they are still warm.

Pour Down Chocolate Frosting Cake

Dont ask why but under this amazing frosting lies not so amazing boxed Duncan Hines Yellow cake:) Once cake is baking according to the instructions given on the box. You can start preparing the frosting but make sure to take it out in between the frosting preparation.
Frosting Ingredients
1 3/4th Butter
 4TBS Cocoa(Tader Joe)
1/4th cup Milk
1TSP Vanilla
1 pound confection sugar
Your favorite kind nuts or Sprinkles of your choice
How to make it
Start the process of frosting when cake is still warm and can be removed from the baking dish. Place place the cake where can be easily moved again to the original cake platter. I know i know its lots of moving but when it comes to chocolate no matter how careful you are it finds its way to go the places you doesnt want it to go. Right now i can say this about QB (My grandson) QB loves to explore kitchen cabinets especially under the sink which is the only one i dont want him to explore . Now pour frosting slowly on the warm cake. Make sure to pour it slowly and evenly. No need to spread it evenly it makes its own way where needed. Once each and every corner gets its fair share you can transport it to the cake platter. Enjoy warm with cold milk.

Paleo Spinach/Mushroom casserole

Ingredients
CRUST
Cream Cheese 1/4th cup
Parmesan cheese 1/4th cup
Egg 1
Almond Flour  2 TBS

How To Make It
Softened butter by leaving it on the counter for sometime depending on your room temperature. One thing I learned from old school is eggs and butter perform well in baking when they have adjusted their properties in room temperature.  Add all the wet ingredients slowly mixing with a spatula, At the end add Almond flour. 
Grease a small 4 by 9 dish with butter. Spread the mixture evenly and set aside.

​TOPPING
Spinach 1/2 bag
Mushrooms 1 cup
White sweet Onion 1/4th
Butter 2 TBS
Mozzarella Cheese 1/4th cup
How To Make It
Suat'e onion and mushroom in butter when slightly cooked add spinach. Don ot ver cook as soon spinach wilt evenly and  liquid has evaporated. Turn the stove off. Spread topping evenly on the already made crust. Sprinkle mozzarella cheese on the top. Bake for 12-15 minute at 375 degree. Insert tip-off a knife to see if its cooked from the inside. Take it out from the oven and serve warm.

TURKEY BRINING

It's about time to set aside my Pakistani cooking soul and switch turkey seasoning to American brining. My Tandoori Turkey has no place on all American side dishes table. Wait that also mean i have to wear an ugly a sweater on thanksgiving? Anyhow I collected all the required seasoning and herbs thanks to Trader Joe's for making my life easy and my mom who had gave me this huge pot long time ago. This pot holds no matter what i cook in large scale Yes it didn't disappoint me this time either.  After giving a good rinse by taking all the unnecessary stuff out i was able to soak her in this heavenly American fluid. one more thing to share tha while rinsing this baby i kept on remembering my Bay gee(grandma) to who was once told if its in her will she will wash meat with soap and water:)
Ingredients
Apple Juice: 3 cups
Orange peel of two big oranges
Tri Color pepper corns: 3 Table spoons
Chopped Garlic Cloves: 6-7
Bay leafs: 4
Kosher Salt 1/2 cup
Dry Coriander: seeds 2 teaspoons
Black Cloves: 1 teaspoon
Brown Sugar: 1 cup
Fresh Rosemary:1/2 of a bunch 
Directions
Wash and clean out Turkey under running water i mean give her a good extra rinsing bath. Pat dry and placed in a clear X large bag(Clear trash bag will do the job)
Now add all brining ingredients in a pot and bring to boil. when it cools off pour over Turkey. Add some water if needed so it soak completely. Refrigerate for at least 24 hours. Turn her occasionally so seasoning reached to all sides.
Take the bird out of the bag and give her a good rinse under running water. This will help wash out all the unnecessary salt. Pat Dry. She is ready for the next stage!!!!

Low Carb Bagels
Ingredients
  • 1 cup Parmesan cheese
  • 2 Tbs cream cheese
  • 1 Egg
  • 6 tsp Almond flour
  • 1/8th tsp Baking powder
  • 1 tsp coconut oil to form bagel shape
           For Toppings
  • Everything bagel seasoning
  • Flaxseed coarse powder
Preparation

1.  Melt mozzarella cheese with cream cheese  microwave for 40 seconds. Mix well
2.  Beat egg in a bowl and add to the melted cheese. Mix well .
3.  Add almond flour and baking powder to the mixture. Mix well and make a ball. (It will be very sticky. Grease your hands with coconut oil and form a ball.
4. Refrigerate for 10 minutes
5. Turn oven on 350 degree.
6. Take it out of a refrigerator and cut dough in 5 equal pieces. Use each piece to make a bagel.
7. Grease your hands with coconut oil.  Roll dough on a plain surface and meet two ends to make a bagel shape. Make sure to have enough space in the middle to have a bagel hole.
8. Sprinkle seasoning on the top.
9. Bake on lightly greased baking tray. For 15 minutes.
10. Broil for 2 minute to get a golden look.
 Serve with cream cheese.
